This morning we enjoyed a lazy wakeup with the Man hanging about for a bit before heading off to work. There are so many mornings that he is out the door before any of the rest of us even wake up that I just love it when he can stick around long enough to enjoy a hot breakfast at home. You might recognize the beans as leftovers from the other night. They were even better today.
Sunday Scramble:
pat of butter
1/4 - 1/2 cup spring onions or scallions, diced
1 clove garlic, minced
1/4 cup red bell pepper, diced
1/4 cup green bell pepper or serrano pepper, diced
6 eggs Crack all 6 in a bowl and lightly mix with fork with a dash of salt and pepper
1/4 cup shredded sharp cheddar cheese
salt and pepper to taste
In a medium skillet, melt the butter over medium heat. Add the onions, and peppers and cook until soft. Add minced garlic and cook for an additional minute. Add the eggs and stir occasionally to scramble. Remove from heat when the eggs are just shy of how you liked them cooked. They will continue to cook a bit even after being removed from the heat. Sprinkle with the cheese and fold into the eggs. Plate and serve immediately.
