After I handed the man his dinner last night, he insisted that I put a picture and recipe here. I feel a little guilty, because it is super simple and feels a bit like cheating because I used canned beans...but whatever...it was very popular last night, and I can see adding it into our rotation. This recipe fed four and provided leftovers. So as usual, I made a ton...if you want less divide the recipe accordingly.
Easy Peasy Black Beans + Egg
1 tbsp canola oil
6 stalks celery chopped
1 medium onion diced
1 cup water or broth
6 cans black beans drained and rinsed.
1 can crushed roasted tomatoes with liquid
2 bay leaves
1 1/2 tsp ground cumin
salt and pepper to taste
queso fresco for garnish
cilantro for garnish
Sriracha sauce for garnish
1 egg per plate
fresh avocado on the side
In a medium soup pot heat the canola oil. Add the onions and celery and saute on medium heat until tender. Add the water or broth. In this case I used vegetarian (no) chicken broth. Bring this broth mixture to a simmer and add the beans, bay and cumin. Simmer for 20 minutes. Add the tomatoes and simmer for an additional 10 minutes. Season to taste
Fry one egg per bowl of beans. The man likes his yolk relatively runny...so I make his over easyish.
Plate the beans, add a fried egg on top...sprinkle with queso fresca, splash with Sriracha (if you like the burn) and add avocado to the side to help calm said burn. I only wish I'd had some fresh cilantro. Ah well..next time.
